Aude and Guillaume Lavolle have spent the last decade reinvigorating soils with organics and biodynamic touches, working every parcel with a horse drawn plough, and keeping new oak at 15% or less. The 1er Cru Clos Blanc sits on the northern edge of Pommard near the Beaune border, named for its concentration of pale limestone and clay. That terroir delivers a
