The hand harvested grapes are destemmed and then lightly pressed. 70% is vinified in temperature controlled tanks, 30% in neutral barriques. The wine is then bottled 7 months after harvest and kept on the lees for 24 months. Wines are put to market after a minimum of 4 months after being disgorged.
